Raw vegan pesto ♡ 

Yummy!

So I’ve been working on this recipe for a week, as the first few times it was far too ‘noochy’! 

This is just the pesto recipe, but I put it on top of raw spiralised veg, like courgette or sweet potato, and add some black olives and chopped tomatoes! 

Ingredients:

  • 1 cup fresh basil
  • 1/2 an avocado
  • 1tsp nutritional yeast
  • As much salt and pepper that you like
  • 1/2tsp garlic powder
  • 2tsp mixed seeds
  • Splash of water

Method:

  • Blend ingredients into a creamy sauce! (I personally use a hand blender, but a high speed food processor/blender would work!)

Raw vegan tacos! ♡

So I did a video on this months ago, but I want to do a written recipe! 

This is a large and extremely filling meal, and it’s not for someone who’s scared of healthy fats! 

The spice can be adjusted to what you like, but remember that the toppings will cool it down! 

For the assembly:

  • 6 romaine lettuce leaves/chard leaves
  • The spicy walnut meat
  • 1 avocado
  • 2 chopped tomatoes
  • 1 cob of raw corn

For the spicy walnut meat:

  • 1 cup walnuts
  • 1 cup sundried tomatoes. (If dry, soak for at least 30 mins, if in oil, wash off the oil.)
  •  1/2 tsp cayenne pepper/chilli powder
  • 1-2tsp smoked paprika
  • Sprinkle of salt and pepper

Method:

  1. Blend the ingredients for the walnut meat together in a food processor, you may need to stop and scoop the mixture off the edges so it’s all mixed properly!
  2. Assemble the tacos! I personally put the other ingredients separate so I can add them when I want to!
  3. Enjoy this messy but wonderful dish!

You could make some raw cashew cream and drizzle it on top, I’ll do a blogpost for this separately when I get the recipe right. 🙂

Raw vegan sweet potato pasta dish ♡ 

Good afternoon! I just had this glorious dish for lunch, and I had to share it!

SO GOOD!

The ingredients are pretty simple, you can use grated sweet potato, or spiralised! I personally buy mine readily spiralised as I don’t have a spiraliser yet. If you’re not a sweet potato fan, you can use courgette, butternut squash, all spiralised or grated! It would work either way, I used sweet potato cause I wanted something carby and filling! 

(Serves one as a main, or two as a starter)

Ingredients:

  • 250g spiralised/grated sweet potato
  • 8 black olives
  • 3 medium tomatoes (chopped) 
  • 1tsp dried oregano
  • Large bunch of fresh basil
  • Sprinkle of salt and pepper

Method:

  1. If your sweet potato isn’t already spiralised/grated, do that now!
  2. Add all ingredients to a large bowl and mix so everything is distributed evenly, then put into a pasta bowl. 
  3. Enjoy!

Simple, fresh, raw, healthy, DELICIOUS!

Raw vegan brownies ♡ 

Holy. Crap. I just made these on a whim and they’re INCREDIBLE! I mean…LOOK AT THEM!

I recently went fully raw, and I’ve seen so many raw brownie recipes, but I wanted to make my own unique one!

They’re super rich, gooey and nutty, with a hint of coconut flavour! 

Here’s the recipe!

Raw brownies ♡ 
Ingredients 

– 2.5 cups dates

– 2 cups nuts of your choice (I used almonds and walnuts)

– Around 1/8 cup of sweetener (maple syrup, carob, agave etc)

– 1/4 cup desiccated coconut

– 1/3 cup cocoa powder

– 1/4 cup maca powder (can use milled flaxseeds/chia seeds etc, any kind of superfood powder! I use maca because of the health benefits and the nutty taste.)

– 2 tsp goji berries

– 1/4cup water
Method:

– put all ingredients except the water into a food processor

– Blend the ingredients and gradually add the water, make sure the mixture isn’t overly wet, you want it like a crunchy dough texture, but still mouldable

– Put the mixture onto a non stick baking sheet, and mould the mixture into a thick square, then push the mixture down until it’s around 1.5-2cm thick

– Cover the top with another baking sheet and put the mixture in the fridge for at least 30 mins

– Cut the brownie into whatever size pieces you like!
